With the champion's ballad, 28. I've never tried zapping out my stamina upgrades for the sake of hearts, but you probably could; I'd be lost without my extra wheels. The max is 30 hearts and 3 stamina wheel. I only used the apparatus glitch when I was at 28 hearts and couldn't get any more with spirit orbs:).
