I can still open up the pip boy and mvoe around in the menus and select stuff like normal but I only have audio cues to go off on as the entire thing is invisible. I reinstalled the game and mods recently (after a year or so of not playing), and I cannot recall how to hide the Pip-Boy without outright removing it (which also removes the Pip-Pad).
