it's because you used the save file that already had the maximum hearts/stamina. there is probably a separate value in the files that disables upgrading completely once you reached the maximum. just make a fresh save file and edit that instead. or just use the editor to manually give you the upgrade. id recommend vah medo or vah ruta. those were the easiest divine beasts for me. also, farm durians and cook them. if you combine 5, youll get like 15-20 extra hearts. Shrines and defeating divine beasts are the only way to get permanent hearts. Most of the shrines are all relatively short puzzles.Also, no fairy equivalent for stamina exists.
